200 grams extra hard tofu
6 eggs
1 head garlic
½ tsp rosemary
½ tsp oregano
½ tsp thyme
½ tsp paprika
¼ tsp chili flakes
salt & pepper
Instructions
- Preheat oven top and bottom heat to 350F.
- Cut the broccoli into small florets, drizzle with olive oil, sprinkle with salt and bake for 15 minutes on a tray.
- Cut the tofu into big blocks. Pulse into small chunks in a food processor.
- In an oiled casserole dish (approximately 10inches x 7inches) whisk all the eggs and add the remaining ingredients. Mix well. Season with salt and pepper. Bake in the middle rack at 350F for 15-25 minutes or until a toothpick comes out clean.
